A Naan-Stressful Weeknight Meal
Hellllo hello!Random question for you: what are your go-to weeknight meals to make at home? Sometimes I struggle with what to make, so I usually end up making stir-fry meals or hearty salads. If you're in a weeknight meal rut like me, listen up...The other week, I was trying to think up some quick-and-easy weeknight dinners to enjoy while walking down the grocery store bread aisle. That's when I noticed a package of Stonefire Naan Bread staring me right in the face and had an "ah hah" moment!Bread and I often have moments together...[Can we just stop and appreciate naan bread for a second... like real quick? If you've never tried naan bread, it's the most delicious oven-baked flatbread made within a clay oven (tandoor), served in many Indian restaurants. It's super doughy, tender, and just plain finger-lickin' good, especially with cheese, hummus, tzatziki, or dipped in lentil soup.]Anyway, after I purchased the bread (2 come in a pack), I came up with the idea to make what might be the most stressless weeknight meal ever—Naan Bread Pizza. That's right, Indian meets Italian.Plus, this recipe totally includes one of my other favorite foods (besides cheese, of course)—pesto.Ugh, still drooling over this pic...If you'd like to follow how I made mine, be my guest:NAAN BREAD PIZZA: A Naan-Stressful Weeknight Meal (high five to Sam for that pun!)INGREDIENTS (probably only three that you don't already have on hand)- Stonefire Naan Bread- Jar of pesto... I tend to like ones made with spinach or basil (or you can make your own because it's super easy)- Mozzarella cheese- Olive oil- Red pepper flakes- S&PDIRECTIONS (20 minutes max from start to finish)1. Preheat your oven to 350 degrees.2. Coat the naan bread with a thin layer of olive oil, salt, and pepper.3. Spread 2-3 spoonfuls of pesto onto the bread evenly.4. Thinly slice the cheese and generously place over the pesto.5. Sprinkle red pepper flakes on top depending on your love for spiciness.6. Bake the bread and check around the 8-9 minute mark. (Since there's no meat involved here, you're really just cooking down the cheese and warming the bread.)Dinner will be ready in 15-20 minutes, including prep time.
