What I'm Wicked Into: Four Easy And Delicious Make-At-Home Breakfasts

I don't know about you, but breakfast has always been my favorite meal of the day.There’s something so special about waking up and just treating yourself to a comforting, tasty meal. That, and the whole experience itself offers up such a a pleasant ritual that helps me set the tone for a balanced day ahead.Most mornings you can catch me making one of these four hearty and delicious breakfasts, with coffee in hand of course.Here are my four easy and delicious make-at-home breakfasts guaranteed to brighten your morning and whole day through.1. My #1 go-to in the morning is oatmeal. I know not everyone finds the mushy meal appetizing, but for me, it’s always been so comforting to enjoy a warm bowl of oats, fruits, and spices. It tends to remind me of fall and winters back home, wrapped under a cozy blanket watching a movie.

There are a few different combinations I particularly enjoy.

  • Oats, banana, a scoop of peanut/almond butter, and hemp seeds
  • Oats, blueberries, chia seeds, and walnuts
  • Oats, chopped apples, cinnamon, raisins

It’s up to you weather you add water or milk to the mix. I tend to just add some water, microwave, and add my toppings after. Literally a solid breakfast ready in just a few minutes.

2. An acai berry smoothie (with/without almond butter)

I love how grocery stores sell frozen packets of acai mixes now, like Amazon Planet. It makes my morning smoothies so quick and easy.To make a basic acai smoothie, simply mix one acai packet (loosened up under some water for 10 seconds), 1 cup of berries, almond milk, and perhaps a scoop of peanut butter.

Blend up, pour into a mason jar or to-go cup, and you are good to go.

3. Avocado toast on ezekiel bread with a kick

My favorite way to make the meal is to toast up two slices of low-sodium ezekiel bread, slice/mash a medium-sized ripe avocado (with salt, pepper, and cayenne) and use a fork to spread the mixture onto the browned bread. Crunchy, creamy, so fulfilling. I promise this meal will keep you full 'til lunch—or beyond!

4. Egg scramble with veggies

Whether you stick with whole eggs or just egg whites, this is a really protein-packed way to enjoy the start of your day.Just scramble up some eggs, add a pinch of salt and pepper, a dash of milk, and cook evenly. My favorite veggies to add in are sautéed mushrooms, fresh spinach, red bell peppers, and fresh avocado. Sprinkle in a little sharp cheddar and you’ve got yourself a completely well-rounded breakfast that takes under 10 minutes to create.Have you ever made yourself breakfasts similar to these faves of mine?
