Heyhey, and happy Friday!Ahhh, the weekend is ahead. It's such a sweet thought, huh?I have the perfect (and easiest) dessert for you to make when you're hanging at home the next couple of days.An all-raw fruit and nut pie!Only natural sugar.Only 4 ingredients. And, it's so, so good! Here's how you make it:To make two smaller pies (like I did), just blend one cup of pitted dates and one cup of whole unsalted almonds.Blend until the mixture is close to fine but not too powdery since you want it to stick together as the "crust."Pack the mixture to the bottom of a pie dishes.20180304_164017_resized_1.jpgTo make your yummy and fruity filling, blend one mango and one cup of blueberries.Feel free to switch up the fruit you use. Maybe try strawberries or JUST mango (I did that once). Now, doesn't that sound good!?That's cuz it is.20180304_164039_resized_120180304_164042_resized_1Keep filling until the crust is completely covered.20180304_164223_resized_1.jpgHere's another important note—let the mini pies set in the fridge for an hour or two. The crust will firm up and the fruity filling with thicken slightly. When you bite into this pie, you're going to get punched in the mouth with flavor! The combination of fruit and nuts is divine. It's sweet and salty all in one—and totally guilt-free.What's better than that?!I don't know about you but sometimes I just crave fruit, especially in the summer. It's so refreshing and filling. I love how hydrating it is too.I promise you won't miss ice cream or REAL pie when you eat this (well, that's a half promise, but stilllllll... it's just so good).20180304_164139_resized_1.jpgGive it a try!And be sure to report back. What desserts are you loving lately?Happy weekend to ya!Ari
